Raita rice

from Cuisine at Home: Cuisine for Two magazine

1/2 cup dry brown rice (i've also used white - they're both good)
1/2 cup cucumber, diced
1/2 cup tomatoes, diced
1/4 cup scallions, minced
1/4 cup nonfat plain yogurt
salt to taste

Cook rice according to package directions.
Fold cucumber, tomatoes, scallions, yogurt, and salt into rice just before serving. Serve warm.
